Works-For-Me-Wednesday: Freeze Buttermilk + Recipe

I have never been a fan of buttermilk. But things with buttermilk in them? Oh yes!

I grew up having never used real buttermilk in a recipe. Seriously. I was led to believe that a squirt of lemon juice in some milk was just as good. And it does quite nicely in a pinch.
But recently I decided I was going to use some real buttermilk in a recipe. And I wasn’t sure what to do with the rest of it. I know it lasts pretty much forever, but I didn’t want it languishing in the back of the fridge for that long.

So, I poured it into ice trays, which works out to about 1Tbsp of buttermilk per cube, froze it, and tossed it into a freezer bag. Now when I have a random recipe that calls for buttermilk, I have it on hand. All the info I found on the internet says it can be frozen for 3 months, but I’m guessing it will be fine for a lot longer than that.

Coca Cola Cake
2 cups flour
2 cups sugar
2 sticks butter
3 Tbsp cocoa powder
8oz. Coca Cola
1/2 cup buttermilk
2 beaten eggs
1 tsp. baking soda
1 tsp. vanilla
1 1/2 cups miniature marshmallows
Combine flour & sugar, set aside. Combine butter, cocoa & Coca Cola in saucepan, bring to a boil. Pour over dry ingredients, mix well. Add buttermilk, eggs, baking soda and vanilla. Mix well. Stir in marshmallows. Bake at 350 in 13x9 pan for 30-35 minutes, until center is set.
Frosting
1 stick butter
3 Tbsp cocoa powder
4oz. Coca Cola
4 cups powdered sugar
1 cup toasted pecans
Combine butter, cocoa powder, and Coca Cola in saucepan, bring to a boil. Add powdered sugar, remove from heat. Mix well. Add pecans. Pour over cake while it’s still hot.

Yeah, it’s yummy.

  1. Well, aren't you just as clever as can be. I am sure that clever tendency was passed along from your Mimi - because I never "cared" whether something had the "real" buttermilk or the "make-do" buttermilk. Of course, I did think your coca cola cake that you made for my birthday was fabulous! Must have been the "real" buttermilk.
