Today is a special edition of Works-For-Me-Wednesday over at We Are THAT Family. Everyone’s sharing their favorite summer recipes.
I’m not sure that I have a favorite summer recipe, as there seems to be a new rotation every year. Here’s one I made for the first time a few weeks ago. Cool, refreshing, and sinfully delicious.
I think the qualifications for a good summer recipe are: easy, fast, minimal cooking, refreshing, and a high gobble quotient; meaning that it will likely be eaten quickly and tempting leftovers do not exist.
Therefore, anything with a pre-made crust, ice cream, Cool Whip, cream cheese, etc. usually qualify.
Here’s a simple, long-standing family favorite we like to call Oreo Ice Cream Cake. (Because we’re original like that.)
1 quart of vanilla ice cream, softened
1 package of Oreo cookies, crumbled
1 large bowl of Cool Whip, thawed
Basically you just stir it all together, spread into a 13x9 pan, and toss into the freezer for a few hours until hardened. Remove from freezer about 5-10 minutes before serving. Enjoy!
